Roasted Lemon-Parmesan Broccoli:
2 large or 3 small heads of broccoli
Zest of 1 lemon
2 Tablespoons fresh lemon juice
1 Tablespoon lemon-infused olive oil
1/4 teaspoon sea salt
Pinch of Black Pepper
2 Tablespoons Parmesan cheese
1-1/2 Tablespoons toasted Panko bread crumbs
Directions:
Preheat oven to 425 degrees F. Cut broccoli florets into bite-sized pieces. Mix lemon zest, lemon juice, olive oil, salt and pepper in a bowl. Add the florets and toss. Place broccoli mixture on a baking sheet and roast in the oven for 12-14 minutes. Remove from the oven and immediately toss with Parmesan cheese and toasted Panko.
