Here’s a quick, simple salad with a nutty, spicy flavor that pairs well with many of my main dishes. Only 118 calories per serving.
Arugula & Pine Nut Salad:
2 teaspoons lemon juice
1 tablespoon Parmesan cheese
1/4 teaspoon salt
1/2 teaspoon dried parsley
1/4 teaspoon pepper
1/4 cup pine nuts, divided
1.5 Tablespoons olive oil
1/2 Tablespoon champagne oil
1/2 tablespoon honey
Directions:
Rince and spin dry the arugula. Toast pine nuts in a pan for about 4-5 minutes, just until slightly brown. In a food chopper or processor, add lemon juice, Parmesan cheese, salt, pepper, dried parsley, olive oil, and 1 tablespoon toasted pine nuts. Process until smooth. Toss arugula with vinaigrette and remaining toasted pine nuts.
