I serve this refreshing, low-calorie side with several of my dishes. This dish is very easy to put together and super portable so keep it in mind as a side for your next BBQ. Each serving has only 54 calories!
Creamy Cucumber & Radish Salad:
1/3 Non-fat Greek Yogurt
2 teaspoons Lemon-Flavored Olive oil
2 teaspoon lemon juice
1 Tablespoon Fresh dill, chopped
1 Tablespoon Fresh chives, chopped
1/2 Tablespoon Champagne Vinegar
1 teaspoon Light Agave Nectar
1/2 teaspoon lemon zest
Salt and Pepper to taste
6 Radishes, sliced thin
1 Large Cucumber, peeled and sliced thin
Directions:
Add the first 9 ingredients into a bowl and stir to mix well. Slice the radishes and peeled cucumber–add to bowl and stir to make sure the radishes and cucumber are well-coated.
