I also like to call this the “everything but the calories” pasta salad. My husband likes salads with lots of “stuff” in them, so I made this one for him and he loved it. What I also like about this salad is that it still allows you to enjoy some pasta without having a high-calorie bowl full of it.
Pasta Salad:
3 ounces Medium Shell Pasta (about 1 cup dried)
2 Romaine Hearts
1/4 cup sliced black olives
4 slices center cut bacon, cooked and crumpled
14 ounces Chicken breasts, cooked and cubed
4 ounces Pepperoncini Rings
3 ounces Parmesan Cheese
2 Roma tomatoes
Directions:
Cook the pasta according to package instructions. Set aside and cool. Chop lettuce and tomatoes and place in a large serving bowl along with the black olives, pepperoncini, chicken, and crumpled bacon. Toss to mix. Sprinkle with parmesan cheese.
Serve with yogurt ranch dressing.

Yogurt Ranch Dressing:
1/2 Cup Nonfat Greek Yogurt
1/3 Cup Buttermilk
1 Tablespoon lemon juice
1 Tablespoon Fresh Parsley
1 Tablespoon Fresh Dill
1/2 Tablespoon Cider Vinegar
1 Tablespoon Olive Oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 Tablespoon honey
Directions: Place all ingredients in a blender or food chopper and blend until smooth.
