Okay, if you’ve never cooked radishes before don’t freak out. I was nervous too when I first tried cooked radishes but I ended up loving them. They have a very slight turnip taste to them. Adding the tangy balsamic and the sweet apricot jam really amps these radishes up. Each serving has only 44 calories.
Apricot-Balsamic Glazed Radishes:
2 Tablespoons apricot jam
1/2 tablespoon balsamic vinegar
1-1/2 heads radishes, cleaned, de-stemmed, and sliced in half
1 teaspoon olive oil
Pinch of Salt & Pepper
Directions:
In a nonstick skillet over medium heat, add the olive oil. Add the radishes and season with salt and pepper. Saute until slightly brown for a few minutes. Stir the balsamic vinegar and jam together in a small container and then add to the skillet—mix well with the radishes to incorporate well. Continue to cook over medium low until radishes are fork tender.
