This is a great recipe for a busy weekday because the crockpot does most of the work for you. Although little effort on your part, the end result is a saucy, delicious dish. I serve this sauce over No Yolks Egg Noodles for a healthy, hearty dinner that is only 371 calories per serving.
Creamy Tomato Sirloin Roast:
16 ounce Lean Sirloin Roast (all the fat trimmed)
28 ounce can crushed tomatoes
3 cloves of garlic, minced
1/2 Tablespoon Italian seasoning
Pinch of red pepper flake
1/4 teaspoon black pepper
1/2 teaspoon sea salt
1/2 cup reduced fat sour cream
8 ounces No Yolks noodles
Freshly Chopped Parsley to Garnish (Optional)
In a crockpot, place sirloin roast, crushed tomatoes, minced garlic, and all seasonings. Cook on low for 8-10 hours, until roast is falling apart. Turn the crockpot off and using two forks, shred the sirloin roast and stir to mix in well with the sauce. Stir in the sour cream into the meat and sauce and serve over noodles.
