You are gonna love the freshness of this light summer dinner. I try to test the limits of the pita pocket by stuffing in as many crisp veggies as I can. The entire dish, with the dressing, is only 320 calories.
Greek Style Turkey Burgers:
16 ounces lean ground turkey breast
1/2 Tablespoon fresh mint, chopped
1 Tablespoon fresh dill, chopped
1/2 grated white onion
Zest of 1 lemon
1/4 teaspoon Garlic powder
Salt & Pepper to taste
2 teaspoons olive oil
2 whole wheat pitas, split in half
1/2 English cucumber
1/4 red onions, sliced
1 Roma Tomato
Red Lettuce Leaves
Directions:
In a medium bowl, mix turkey breast, mint, dill, grated onion, lemon zest, and garlic powder until mixed well. Form 4 equal-sized patties and season with salt and pepper. Add olive oil to non-stick skillet over medium heat. Add turkey patties and cook about 4 minutes per side, until internal temperatures reaches 160 degrees F.
Rinse and slice red onions, cucumbers, and Roma tomato. Rinse red lettuce leaves and dry with paper towels.
To assemble, take on pita half and stuff with red lettuce, turkey burger, onions, tomato, and cucumber. Drizzle with garlic-dill dressing (recipe below).
Garlic-Dill Dressing:
1/2 cup Greek yogurt
1/4 cup low fat feta
1 garlic clove
1 tablespoon Fresh dill
2 teaspoons Lemon juice
2 teaspoons olive oil
1/2 Tablespoon water
1/4 teaspoon Black pepper
1/4 teaspoon light agave
Directions:
Place all ingredients in a food chopper or food processor and process until smooth and creamy.
