Italian Style Green Beans:
12 ounces fresh green beans
2 cloves garlic, minced
2 Roma Tomatoes
1 small Shallot
1 Tablespoon chopped Fresh basil
2 teaspoons olive oil
Directions:
Bring a pot of water to a boil and add a pinch of salt. Trim and clean green beans. Chop Roma tomatoes, shallot, garlic, and basil. Add green beans to boiling water and boil 4-5 minutes, until tender but still crisp. Drain the green beans and return pot to burner over medium heat. Add the olive oil, garlic, shallot and tomatoes to the pot and cook a few minutes, until garlic is light browned. Add green beans back to pot and stir to incorporate other ingredients. Remove from heat and toss in fresh basil and a pinch of salt and pepper.
