Taco Salad Bowl

I recently bought some of those fancy tortilla bowl makers and I love ’em. I’m able to use a low carb tortilla and bake it — saving me hundreds of calories (versus the fried tortilla bowls). So, stuff this tortilla bowl to the brim with my taco salad and don’t forget to top it off with the avocado-cilantro dressing. Taco Salad Bowl + Dressing = 440 calories.

Taco Salad Bowl:

1 pound lean (93%) ground sirloin

2 teaspoons olive oil

1 clove garlic, minced

1 teaspoon cumin

1/4 teaspoon pepper

1/4 teaspoon salt

1/2 Tablespoon Ancho Chili Powder

1/4 cup Salsa

4 low carb tortillas (80 calories or less each)

1/2 cup reduced fat cheddar

1 head iceberg lettuce

2 Roma tomatoes

1/2 red onion

20 black olives

Cooking Spray

Directions:
Heat 2 teaspoons of olive oil in nonstick skillet over medium heat. Add ground sirloin and seasonings (cumin, ancho chili powder, salt & pepper). Break up the meat as it cooks. After slightly brown, add the minced garlic and continue to cook until meat is brown and cooked through.
Heat oven to 350 degrees. Spray 4 tortilla shell pans with nonstick cooking spray. Place the tortillas in the pans and bake for 8 minutes, until slightly brown.

Chop, rinse, and spin-dry the iceberg lettuce. Chop Roma tomatoes, grate cheese, and slice black olives and red onions.

Assemble the taco bowl with a large fistful of lettuce in the baked tortilla shell, followed by 1/4 of the taco meat mixture, 1/4 of the cheese, salsa, tomatoes, red onions, and black olives. Drizzle with avocado-cilantro dressing (recipe below).

Avocado-Cilantro Dressing:

1/4 Cup Nonfat Greek Yogurt

1/2 Cup Buttermilk

1/2 Avocado

1 Tablespoon fresh lime juice

2 Tablespoon Fresh Cilantro

1 Tablespoon Olive Oil

1/4 teaspoon salt

1/4 teaspoon pepper

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1 teaspoon Light Agave

Directions:
In a food chopper (or food processor), add all ingredients and process until smooth.

Servings: 4 * Calories Per Serving: 110 * Fat: 8.7 g * Carb: 6.3 g * Fiber 1.8 * Protein: 3.0 g * Sugar: 3.7 g * Sodium: 187 mg * Cholesterol: 1 mg
