
Blackened Fish Tacos:
1/4 teaspoon sea salt
1 teaspoon garlic powder
2 teaspoons chili powder
1/4 teaspoon Chipotle Pepper (eliminate to make less spicy)
1/4 teaspoon white pepper
1/4 teaspoon black pepper
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon cumin
4 Tilapia Filets (4 oz each)
4 Flour Tortillas (low carb) 80 cals maximum
2 teaspoons olive oil
1 cup shredded lettuce
1 Roma tomato, diced
Directions: Mix seasonings and rub over one side of tilapia fillets. Heat a skillet to medium high heat. Add olive oil to pan. When oil starts to sizzle, add tilapia fillets seasoned side down. Sprinkle remaining seasonings onto the other side of fillets. Cook about 3-1/2 to 4 minutes per side. Remove from pan and set aside on plate.

Taco Dressing:
2 Tablespoons Light Mayo
3 Tablespoons Low-fat Greek Yogurt
1/2 teaspoon chili powder
1/4 dried cilantro
1/4 teaspoon salt
1/2 Roasted yellow bell pepper (core and seeds removed)
2 teaspoons lime juice
2 teaspoons olive oil,
Cooking spray (1/4 second)
1/4 teaspoon horseradish
2 teaspoons dill pickle relish
Directions: Preheat oven to 450 degrees F. Spray yellow bell pepper with cooking spray and place in small oven-safe dish and slide into oven for 20 minutes, until skin is blackened and starting to peel. Remove from oven, place in paper bag (it will peel easier that way) and allow to cool. After pepper is cooled and skin peeled, add to food chopper or processor along with lime juice, olive oil, cilantro, chili powder and salt. Process until smooth.
Put Greek Yogurt, Mayo, horseradish pickle relish in a bowl. Add bell pepper puree to bowl and stir until well-blended.
