
It’s the perfect weather for soup! The ingredients that are in this soup seem rather simple, but it’s the spices that make it luxurious and comforting. A large bowl of this soup is only 201 calories, few enough to allow for a little naan bread on the side for dipping!
Ingredients:
2 teaspoons olive oil
1 onion
4 cloves of garlic
1 teaspoon cinnamon
1/4 teaspoon cumin
1 teaspoon paprika
¼ teaspoon coriander
½ teaspoon black pepper
½ teaspoon salt
1 can crushed tomatoes (28 ounces)
2/3 cup Israeli couscous
1 quart vegetable stock
2 cups baby spinach
Directions:
Dice the onions and mince the garlic. Heat a pot over medium heat and add olive oil. Once sizzling, add onion and garlic. Sauté in oil until soft, about 4-5 minutes. Add in the crushed tomatoes, spices, and vegetable stock. Simmer about 10 minutes, bring back toa boil, and then add couscous and cook couscous according to package instructions, usually about 8 minutes. Reduce heat once more to medium low and add baby spinach. Stir until spinach softens, about 3 minutes. Serve.
