
Just consider this tortilla a blanket to some vibrant, mouth-watering deliciousness! I love coming up with taco recipes, since tacos are one of my comfort foods. This one does not disappoint. Make sure you add the mexichurri sauce, which brightens up the whole taco. Wanna know the most comforting part? It’s only 382 calories per taco!
Mexichurri Sauce:
2 teaspoons fresh mint, roughly chopped
1 tablespoon fresh parsley, roughly chopped
1/4 cup cilantro, roughly chopped
2 tablespoons olive oil
1 tablespoon onion, roughly chopped
1 Jalapeno, minced
2 garlic cloves, roughly chopped
1 pinch red pepper flake
1 teaspoon red wine vinegar
Fresh lime juice of one lime
Dash of Salt
Dash of Pepper
Directions:
Add all ingredients to a food processor and blend until smooth. Set aside.
Steak Tacos:
1 – 8-ounce sirloin steak
1 teaspoon chili powder
1/4 teaspoon ground coriander
1/4 teaspoon ground black pepper
Dash of Salt
1/2 teaspoon olive oil
4 white corn and flour tortillas
1/4 cup queso fresco
1 roma tomato, diced
1/2 avocado (sliced into 4 slices)
Directions:
Preheat outdoor grill. In a small dish, mix chili powder, coriander, black pepper and salt. Drizzle steak with olive oil. Sprinkle both sides of sirloin steak with seasoning blend. Grill steak 4-5 minutes on one side, flip, grill another 3-5 minutes for medium rare. Allow steak to rest for about 5 minutes. Slice steak thinly across the grain.
Assemble tortillas by adding the steak, diced tomato, avocado tucked to the side, and a sprinkle of queso fresco. Drizzle top with a spoonful of mexichurri sauce.
