
Think pizza sloppy joes! I made these for a little preschooler I worked with nick-named Jo-Jo, who loved pizza and sloppy joes. The photo makes these look very luxurious, but they are actually light, even with that oozing cheese. Each pizza Jo-Jo is only 416 calories.
Pizza Jo-Jos
1 pound 93% lean Ground beef
1 teaspoon olive oil
1 small Onion, diced
1 clove garlic, minced
1 serving Turkey Pepperoni (about 17), diced
5 Fresh Basil leaves, torn
1/2 ball Fresh mozzarella cheese
1/4 cup Tomato paste
1 Tablespoon coconut sugar
1/2 Tablespoon Worcestershire
1/4 cup beef broth
4 whole sandwich thins, toasted (if desired)
1/2 teaspoon sea salt
1/2 teaspoon ground black pepper
Directions:
Heat a non-stick skillet over medium heat and add olive oil. Once olive oil is heated, add diced onion and garlic. Sauté onion and garlic until softened, about 4 minutes, and then add ground beef. Break up ground beef into small pieces as it cooks with a spatula, incorporating the onion and garlic. Once the beef is mostly browned, add the tomato paste, salt and pepper, and use the spatula to incorporate into the meat. Add the sugar, beef broth and bring to a simmer on medium-heat. Let simmer for about 5 minutes while you slice the pieces of mozzarella cheese. Add the four slices of mozzarella on top of the beef mixture and top the skillet with the lid. Turn the heat to low and let cheese melt slightly.
Using the cheese slices as a guide, scoop 1/4 of the mixtures onto the bottom of the sandwich thin and then place the top of the sandwich thin.
Yes, it will be pouring out of the sides, so have a fork ready to enjoy the droppings.
